The BEST Vegan Chicken Salad Wrap

This isn’t just any old chicken salad recipe. This just isn’t any old vegan recipe. And it didn’t have any old recipe development either. For us, this vegan chicken salad became an obsession.

We first tried vegan chicken salad wrap at the Maui Farmer’s Market, and after we became obsessed. Like couldn’t stop thinking about it long after the trip. How was it so creamy? How was it seasoned? Why is it so satisfying? Why do we not miss the presence of traditional meat?

After some internet research and a little experimentation, we did our best to reverse engineer that taste of Hawaii for your own kitchen.

First things first, it is possible to have a satisfying sandwich without meat. You already know how to use/make chicken salad, and by making one simple substitution, this classic is completely transformed into an even more sustainable option.

This recipe is also a great introduction for cooking with tofu. It is not intimidating, and it is not gross. Tofu is super creamy and does a great job soaking up seasoning and other flavors. Plus, it travels well too!

Pairing our tofu substitution with spike seasoning and dried basil ensures the flavor of our mixture holds up in a sandwich, wrap, or any other application.

The spiced tofu mixture balances well with an assortment of crunchy vegetables so each bite is tasty and interesting.

The BEST Vegan Chicken Salad Recipe

Ingredients:

Vegan Chicken Salad:
1 (14 oz) block extra firm tofu, drained and patted dry
2 tablespoons soy sauce
2 tablespoon nutritional yeast
1 table spoon spike seasoning
1/2 tsp of dried basil
1 - 2 celery stalks, minced
2 tablespoons minced vidalia onion
4 cloves minced garlic
3/4 cup vegan mayonaise

Garnish:
Avocado, sliced
Sprouts, rinsed
Cucumber, shredded into matchsticks
Green leaf lettuce, thinly sliced
Bell pepper, sliced
Tomato, diced

Instructions:

Mix together all of the vegan chicken salad ingredients in a bowl except the tofu. Crumble tofu into the bowl of seasonings with your hands. Gently combine until tofu is thoroughly mixed. Your vegan chicken salad is ready to be consumed! You may need to remix before eating if you plan on refrigerating the mixture.

Prep garnish ingredients.

Wrap or build your sandwich with the avocado, sprouts, cucumber, green leaf lettuce, bell pepper, and tomato. Enjoy!

Chef Notes: We recommend crumbling the tofu by hand because we prefer the texture. If you do not want to use your hands, feel free to cut it into cubes too. We also recommend eating the vegan chicken salad as a wrap or sandwich with some crunchy veggies. Again, feel free to add it to a bowl of salad greens or however else you enjoy your chicken salad.
